I have the best luck when I roast butternut squash. The hardest part is peeling it, but I have found that using a good serrated peeler, you can actually peel it like a potato, although it takes a bit more effort.
After that, dice it or slice it, toss with olive oil, salt, pepper, and your choice of herbs and/or spices, and bake it on a sheet pan at 400 degrees for 30 minutes or so.
Eat it like that, or add it to salad, or put it in a layered casserole with caramelized onions, mushrooms, tomato sauce, and toasted bread crumbs.
