Laying Odds

And so the weekend ends...

with a wet and happy tired dog,



and a homegrown butternut squash casserole.



If the week ahead is half as satisfying, we'll do just fine.

  1. Yum..Looks so good. I have a CSA butternut squash I don't mow what to do with. Share your recipe, please? I used to love to see (and taste) all the delicious creations you brought to lunch at work

  2. I have the best luck when I roast butternut squash. The hardest part is peeling it, but I have found that using a good serrated peeler, you can actually peel it like a potato, although it takes a bit more effort.

    After that, dice it or slice it, toss with olive oil, salt, pepper, and your choice of herbs and/or spices, and bake it on a sheet pan at 400 degrees for 30 minutes or so.

    Eat it like that, or add it to salad, or put it in a layered casserole with caramelized onions, mushrooms, tomato sauce, and toasted bread crumbs.
